YES PLEASE ✨ 🥕 My goal this year is to save some SERIOUS money on my food shop, so follow along & let’s do it together 💖 Soup is PERFECT for batch cooking and freezing until you need a quick & easy lunch so I’m sharing my favourite carrot & sweet potato soup recipe for you to save for later!! ——- Recipe: 300g chopped carrots (approx) 500g chopped sweet potato (approx) 2 garlic cloves 2 chopped onions 1 litre veg stock (low salt or use no more than 3 cubes) 150ml creme fraiche (half fat works fine too) Salt & pepper for seasoning Oil for drizzling/ cooking 1tsp butter (optional, can use oil) 1. Put the carrots, sweet potato and garlic into a roasting tin and drizzle with oil. Toss and roast in the oven (200C/ 180 fan/ gas 6) for around 30 minutes. 2. Meanwhile, fry the onions until soft & golden in a tsp butter (can use oil) 3. Add the roasted veg to the pan of cooked onions and add the stock. Add the creme fraiche and blend. Season to taste. 4. If using freezer bags, cool the soup down a little first by placing the pan into the sink full of cold iced water and stir regularly. 5. Once cool, portion & freeze! 6. Defrost and reheat in the microwave or on the hob, stirring regularly until piping hot all the way through. To reheat from frozen, add to a pan and cook on a low heat to defrost the soup. Once defrosted, turn up the heat for a few minutes until piping hot all the way through. I priced up this soup using the @tescofood grocery app as this is where we shop weekly. A FAST (yet still safe…) way to defrost your turkey! Just make sure you use cold water (not hot, not warm!) and it’s much safer than defrosting at room temperature as you’re not allowing the turkey to enter the danger zone where bacteria multiply rapidly…. Plus it’s SO much quicker! 😅 Defrost in cold water for a few hours (allow 1 hour per kg) and then move to the fridge until you’re ready to cook! ✨ Brie & Cranberry stuffed pigs in blankets✨ Some tips when making yours: 🍒 Decant some cranberry juice from the jar to a small bowl before you start and discard any from the bowl you haven’t used at the end. You don’t want to be double dipping your spoon from raw sausage to the jar! 🧀 Slice your Brie before you start and put the rest back in the fridge, away from the raw sausage before things get messy 😅 🌭I personally find these too much to replace classic pigs in blankets on Xmas dinner as I use normal sausages when making these but feel free to use any size sausage you like! ❄️ Suitable for freezing. Defrost & cook as normal 🍒 Cook in the air fryer or oven- for the same time you would whatever size sausage you’ve used! Check no pink meat remains before serving or the core reaches 75c if you have a probe. 🧀 I flatten the sausage before stuffing, this helps with having enough room to stuff it Enjoy! 🎅🏻 FREEZABLE FLUFFY PANCAKES ✨ Christmas morning Prep ✨ some tips if prepping your pancakes ahead of Xmas day; 🥞 freeze in a stack with a piece of baking paper between each layer 🥞 cut out a festive shape from every other pancake! Leave one whole, spread with choc spread then place the cut out one on top for a festive pancake with no effort 😅 🥞 reheat in the microwave for 60 seconds, or in the toaster for a little crisp! 🥞 don’t add the milk too fast to avoid lumpy batter Ingredients 50g unsalted butter 220g Self-raising flour 1.5tsp baking powder 1.5tbsp caster sugar (white or golden) 3 large eggs 180ml milk (any) 1tsp vanilla extract Instructions In a small bowl, melt the butter in the microwave or in a pan over a low heat. Set aside to cool. Meanwhile, mix the dry ingredients in a large bowl; flour, baking powder & sugar. Make a well in the centre and add the eggs, vanilla extract and a splash of milk. Mix using a mixer or whisk. Slowly add the remaining milk, whisking well between each addition to help reduce the formation of any lumps. Once smooth, add the melted butter and mix. Over a medium heat, heat up a non-stick frying pan and pour in 2-3 rounds of batter; making sure the rounds aren’t touching. Cook for approximately 2-3 minutes on each side and repeat until all the batter is gone. Save this because it’s the only stuffing recipe you’ll need…. 🎅🏻 CHRISTMAS DINNER PREP SERIES ✨ Pork & Cranberry Stuffing ✨ ingredients 115g dried cranberries 60-70ml port 1 onion, diced finely 4 rashers smoked back bacon, diced 3 tbsp butter 2 garlic cloves, chopped (can use frozen) 350g sausagemeat 4 slices of bread blitzed into breadcrumbs ½ tsp dried thyme 180g peeled, cooked chestnuts, finely chopped 1 egg, lightly beaten instructions: 1. add the cranberries and port to a small jug and leave to soak whilst you prep the rest of the ingredients. 2. Dice the onion and chop the bacon. Melt the butter in a pan and gently fry the onion & bacon for 10-15 minutes, until the bacon is cooked & the onion is soft. Towards the end of cooking, add the garlic and fry for a couple of minutes. Remove the mixture from the pan & set aside to allow it to cool. (chill the bowl in some cold water to help speed up cooling). 3. Meanwhile, blitz the bread into breadcrumbs in a blender and transfer to a large bowl. Add the chestnuts to the blender and pulse until finely chopped (or roughly chop by hand). 4.To the bowl of breadcrumbs, add all of the remaining ingredients; including the bacon mixture and the cranberries and port. Using your hands, mix the ingredients together. 5.Once combined, either press the stuff mixture into an oven dish or roll into balls and place on a baking tray lined with baking paper. And freeze! Defrost 23rd or Xmas Eve in the fridge & on Xmas day, roast for around 30-35 mins until cooked all the way through. No… You really DON’T need to be peeling spuds Xmas morning (or Xmas Eve). 🎅🏻 CHRISTMAS DINNER PREP SERIES - Day 8✨ Potatoes ✨ If you’re prepping potatoes for the freezer, you’ll only want to boil them for 6-8 minutes (vs 12 minutes if doing them on Xmas Eve). Then coat them in fat and open freeze them for 6 hours before transferring to a sandwich bag ready for Xmas day. Cook straight from frozen with a drizzle of oil (plus garlic & rosemary if you like) for 60 minutes on 200c! If you have a busy oven remember everything might need an extra 5-10 minutes cooking time ❤️ If this doesn’t appeal to you, you can always boil your roast potatoes as normal, coat in oil and leave in the tray ready to cook up to 48 hours before, or just peel and put in cold water up to 24 hours before! 🎅🏻 CHRISTMAS DINNER PREP - Freezable Bread sauce ✨ Day 6 of my series where we are getting Christmas food prep DONE so make sure you follow along for the rest of the series. Ingredients; 1 large onion 8 cloves 600ml whole milk 40g butter 1 tsp/ grated fresh nutmeg 8 black peppercorns 3 sprigs of fresh thyme 2 bay leaves 3 slices of bread, blitzed into breadcrumbs 60ml double cream 1.Quarter the onion and stud with 2 cloves each. Place into a saucepan with all the other ingredients except the bread & cream. Bring to a simmer and then leave on a low heat for 45 minutes. This allows the onion flavour to infuse into the milk. 2. After the milk has infused, strain it through a sieve into a jug, discarding the onion & herbs. 3. Return the milk to a clean pan and stir in the breadcrumbs, bring it back to a simmer and cooking gently to allow the sauce to thicken. Stir in the cream and season with salt & pepper to taste. Freeze flat. Defrost Xmas Eve in the fridge & reheat on a low -medium heat in the pan giving it a stir. If prepping these for the freezer, blanch your chopped carrots & parsnips in boiling water for 2 minutes, run under cold water and pop them into a bowl of iced water for 2 minutes. Drain, pat dry and then coat in oil before transferring to a lined baking tray. Once frozen solid, bag up and cook from frozen (extra drizzle of oil optional) on Xmas day for around 45-50 minutes at 200c fan, adding honey 5 minutes towards the end! Freezing them ahead will mean they are *slightly less crispy, but still delicious! 🎅🏻 CHRISTMAS DINNER PREP - Day 4✨ Sage & Onion Stuffing✨ Make sure you’re following along for the rest of the series as we are getting Christmas Dinner prep DONE! And Comment CHRISTMAS if you want all my recipes, checklists & Xmas day cooking plan ❤️ Ingredients; 2 tbsp unsalted butter 1 tbsp oil 1 large onion, finely diced 2 garlic clove, crushed 5 slices of bread blitzed into breadcrumbs 2 tbsp dried or fresh sage, chopped 2 eggs, beaten 1. Melt the butter in a pan and add the oil. Fry the diced onion until golden. Add the garlic cloves and sage cook for another minute or 2. 2. Once cooked, cool down as quickly as possible 3. To a bowl, add the breadcrumbs, onion mix and egg. 4. Shape into balls or freeze flat in a freezer bag. Defrost Xmas Eve in the fridge and bake for around 20 minutes Xmas day. 🎅🏻 CHRISTMAS DINNER PREP - Day 3✨ Brussel Sprouts with Chestnuts & bacon✨ Comment CHRISTMAS if you want all my recipes, checklists & Xmas day cooking plan upfront ❤️ and make sure you’re following for the rest of the series! Ingredients; 500g brussel sprouts
6-8 rashers streaky bacon, diced
180g pre-cooked chestnuts (I use Merchant Gourmet) Plus butter for cooking (a knob! Roughly about 30g) 1. Start by prepping your bacon & chestnut mix by frying off the bacon until crispy. Add in the chestnuts and fry for a couple of minutes. Remove from the heat and allow to cool down before transferring to a labelled freezer bag. 2. Then wash & prep your sprouts as normal. You can slice in half here or before freezing, up to you. 3. Blanch in boiling water for 2-3 minutes then transfer to a bowl of iced water for 2 minutes. 4. Drain & pat dry. Freeze on a baking tray lined with baking paper for 4 hours and then transfer to a freezer bag. On xmas eve, defrost the bacon & chestnut mix in the fridge. On Xmas day, fry up the sprouts from frozen in a generous knob of butter. Once golden, add in the bacon & chestnut mix and heat for another couple of minutes until piping hot all the way through. 🎅🏻 CHRISTMAS DINNER PREP - Gravy ✨ Drown your Christmas Dinner in the gravy it deserves! Some tips when prepping yours 👇🏻✨ But first, comment GRAVY for the recipe & link to the step by step video! ❄️ Freeze flat as this takes up less room in the freezer, defrosts quickly (wouldn’t matter if you didn’t defrost until xmas day!) and you can break it up and pop it into a pan whilst it’s still frozen. BUT, don’t rely on a baggy clip! Pop the bag into a jug, pour in the gravy and then freeze the bag flat on a baking tray until frozen solid. ❄️ Cool your gravy down quickly by popping the bowl into a sink filled with cold water & ice packs. Make sure your gravy is in the freezer within 2 hours, but don’t freeze it whilst it’s still hot. 🍗 Score the chicken wings & smash the garlic before roasting to help release the flavour 💧Save 500ml of the boiling water & pour this into the roasting tin to help scrape some of the goodness from the base of the tray. Add this watery goodness into the pan of gravy with the rest of the ingredients. Ingredients; 2 onion, roughly chopped
1 large parsnip, peeled & chopped
2 large carrots, peeled & chopped
3 sticks celery, roughly chopped
3 rashers smoked streaky bacon, chopped Herbs (2 bay leaves, 2-3 sprigs sage, 2-3 sprigs rosemary, 2-3 sprigs thyme)
3 cloves garlic, smashed
1kg chicken wings, scored
2 tbsp olive oil 100ml port
4 tbsp plain flour
2 litres boiling water

🎅🏻 CHRISTMAS DINNER PREP - Pigs in Blankets. ✨All the tips you need when prepping yours 👇🏻✨ 🥓Allow 2-3 mini cocktail sausages per person. I personally allow 3 per person, plus 5 extra because I DEFINITELY want some leftover for my sandwich the next day! If making chipolatas I would allow 1 each plus a handful extra, probably around 5 again, depending on number of guests! 🐷 Choose a high % of pork in your sausages! One of the reasons I like making my own is that I’m a little fussy about my sausages and only like quality sausages with a high pork content. Too much gristle in a sausage and it’s a no from me! 🥓 Cut your rasher of bacon in half if using cocktail sausages and don’t forget to stretch the bacon using the back of the knife. 🐷 Don’t use defrosted meat to make pigs in blankets unless you’re cooking them straight away 🥓 Use smoked streaky bacon & either chipolatas or mini cocktail sausages like I’ve used 🐷 You can freeze any leftover cooked pigs in blankets (even though they were frozen!) and reheat once again after xmas day. 🥓 Defrost from the 23rd in the fridge and cook as normal according to the back of pack instructions for the sausages. Then coat them in fat and open freeze them for 6 hours before transferring to a sandwich bag ready for Xmas day. Cook straight from frozen with a drizzle of oil for 60 minutes on 200c! 🎃 👻 🐛 Halloween Dirt Bowls 🐛 A super easy recipe that you can make in advance, perfect for a Halloween party or just for a bit of themed fun at home with kids! ——— Recipe: 1 avocado 1 banana 1 tbsp hot chocolate powder 2 tbsp yoghurt (any, I use coconut, vanilla or Greek!) 4 Oreo’s Worm jellies Blend all the ingredients in a blender. Freeze until ready to use. Defrost the night before or an hour before in cold water. Don’t skip freezing your nuggets in a Tupperware first - not touching! If you skip this step, they’ll clump together and you’ll have to defrost them first and use them all at once 🫠 And don’t forget to transfer them into into a freezer bag once they’re frozen solid - it’ll give you back your freezer space! EASY NO-COOK MEAL PREP! But first, follow @foodsafetymum for all your kitchen questions answered on everything from simple meal prep, food storage to saving money on your food shop! Prepping lettuce is one thing I do nearly every week because it requires such little effort, lasts the week and helps me have healthier food in a pinch! Simply chop, wash, dry the lettuce - remove any brown/ manky bits - then line a Tupperware with *dry* kitchen towel and it’s good to go! I usually get at least 5-6 days out of my lettuce, sometimes more if it’s a good one, sometimes less! Especially if it’s sat in my fridge for a while before I’ve gone to the effort of chopping 😬 Hope you found this useful! ‼️SAVE THIS for possibly the easiest & quickest dinner for your kids 💚 and make sure you’re following @foodsafetymum for easier mealtimes & your kitchen questions answered! ✨ ———————- Recipe: 1 red onion 1 aubergine 2 courgettes 2 peppers 2 cloves garlic Sprinkle of Italian mixed herbs 2 tbsp tomato purée 1 can chopped tomatoes 400ml low salt veg stock 1-2tbsp pesto (optional) 25-40g cheese (optional) 1. Put everything in a pan 2. Bring to the boil & simmer covered for 20 minutes. Optional: add 1tbsp pesto and a handful of cheese once cooked 3. Add the pesto & cheese if using, Blend & freeze! 4. Reheat straight from frozen in the microwave on full power, stirring every 30-40 seconds to remove hot spots, until piping hot all the way through 🔥 This batch easily makes enough for us to use throughout the month, if not longer! If keeping in the fridge, use within 2-3 days. ✨ Follow for more make-ahead recipes and tips & advice to help you in the kitchen this Christmas! ✨ The full recipe along with a step by step tutorial is available on my YouTube channel so you can search it on there, or just comment GRAVY and I’ll send you the link directly ❤️ For now though, here’s the make-ahead gravy recipe you need this Christmas! 2 onions, roughly chopped/ quartered
2 parsnips, peeled & chopped
2 large carrots, peeled & chopped
4 sticks celery, chopped
3 rashers smoked streaky bacon, chopped 2 bay leaves
2-3 sprigs sage
2-3 sprigs rosemary
2-3 sprigs thyme
3 cloves garlic, smashed
1kg chicken wings
Approx 2 tbsp olive oil 100ml port
4 tbsp plain flour
2 litres boiling water
2-3 tbsp cranberry sauce 1.     Preheat the oven to 200C/ Fan 180C/ gas mark 6. 2.     Add the chopped veg & herbs to a roasting. Score the chicken wings and add to the tin with the chopped streaky bacon. 3.     Drizzle with oil, tossing to coat. Roast in the oven for 1 hour. 4.     Transfer the contents to a low heat on the hob  & mash. Add the port and mash some more!   5.     Gradually stir in the flour, stirring between each addition, and then add 1.5 litres of boiling water (reserving 500ml for step 6). 6.     Pour 500ml boiling water into the roasting tin and use it to help scrape some of the goodness from the base of the tray. Add this watery goodness into the pan of gravy with the rest of the ingredients. Simmer for 30-45 minutes, stirring occasionally, until gravy has thickened. Season well. 7.     Pour the gravy (in batches!) through a coarse sieve over a large bowl or jug, pressing down with a spoon to push all the liquid through from the chicken and vegetables. Add extra seasoning to taste if required. Add the cranberry sauce. 8.     Pop this jug of gravy into a sink filled with iced water and cool quickly for up to 30 minutes, 9.     Once cool, transfer to a labelled freeze bag and freeze flat! 10.  On Christmas Eve, defrost in the fridge and reheat in a pan on Christmas Day until piping hot – not forgetting to add the meat juices on Xmas day too!  If your gravy needs thickening, add 1tsp cornflour to help thicken. Enjoy!

🥞MAKE-AHEAD PANCAKES 🥞 Christmas morning breakfast in 60 seconds ✨ ✨ I’m on a mission to help make your food prep easier this Christmas so follow @foodsafetymum for easy make-ahead tips & recipes…. From a food safety expert ✨ Because seriously, who needs the added labour of flipping pancakes on Christmas morning 😅 you can either reheat your pancakes straight from frozen in the microwave, or defrost and reheat back in the pan (or toaster!) Recipe: 50g butter
220 g Self-raising flour
1.5tsp baking powder
1.5tbsp sugar 3 eggs
180ml milk (can use up to 200ml depending on consistency
1tsp vanilla extract Instructions: 1. Melt the butter and set aside until you need it 2. Mix the flour, baking powder & sugar together using a wooden spoon and make a well in the centre. 3. Add the melted butter, eggs & vanilla extract and slowly add the milk & whisk until smooth using a balloon whisk. Adding the milk slowly will help make sure your batter isn’t lumpy 4. Over a medium heat, cook rounds of batter for 2-3 minutes on each side. 5.
