Grilled Halloumi & Watermelon Salad
The BEST summer Salad

If I had to choose one lunch to eat all summer long, this would be it.... hands down!
Honestly, I don't think there's a better summer lunch than grilled halloumi and watermelon salad. The sweet watermelon, salty halloumi, juicy strawberries, fresh mint and crunchy walnuts are the perfect combination, and finished with a drizzle of honey? Absolute perfection.
The moment the weather starts warming up, this salad goes straight back onto my menu. It's fresh, colourful, takes minutes to make and somehow feels both light and satisfying at the same time. If you've never paired watermelon with halloumi before, trust me on this one. It might sound a little unusual, but once you've tried it, you'll understand why it's become my favourite summertime lunch.
Recipe
- A handful of fresh watermelon, cut into chunks
- 60g halloumi, sliced
- A handful of fresh strawberries, sliced
- A few fresh mint leaves, diced
- A small handful of walnuts
- A drizzle of honey
Start by prepping all the fresh ingredients into a bowl; for example cutting the watermelon, washing & halving the strawberries, washing & dicing the mint and top your bowl with a handful of walnuts.
Then slice your halloumi either into chunks or strips and fry (or grill) until the halloumi is golden brown and slightly crispy on the outside.
Top your bowl of salad with the warm grilled halloumi & drizzle with honey.
VOILA!
